Ashley Carter is a registered dietitian nutritionist and co-founder of EatWell Exchange, a not-for-profit organization that educates low socioeconomic communities about how to make their cultural foods healthier. She has 10 years of experience in the child and maternal health field with the Special Supplemental Nutrition Program for Women, Infants, and Children. Through her non-profit, Carter offers cooking classes, gardening workshops, and professional training to teach the nutritional value of foods from around the globe. So far, EatWell Exchange has educated more than 21,000 people on how to use African diaspora foods in a healthy way. The non-profit partners with community gardens, and has even started a garden in Grand Goave, Haiti, to make healthier foods more accessible and affordable. Additionally, Ashley is a professor of nutrition science.
